DELICIOUS GUILT FREE CINNAMON OAT COOKIES
Enjoy these soft and chewy cookies as a healthy snack. They are made with healthier ingredients, which makes them guilt free when you are trying to clean up your diet.

- 1/2 cp whole wheat flour
- 1/4 cp + 2 tbsp brown rice flour
- 1/4 tsp baking soda
- 1/2 tbsp cinnamon
- 1/4 tsp salt
- 1/4 cp + 2 tbsp packed brown sugar
- 3/4 cp old fashioned oats
- 1 egg
- 1/4 cp olive oil
- 2 tbsp water
- 1/2 tbsp molasses
Preheat the oven to 375 F.Line a baking sheet with parchment paper and set aside.In a medium bowl, add your dry ingredients, whole wheat flour, brown rice flour, baking soda, cinnamon, salt, brown sugar and old fashioned oats - combine. In the center, create an indentation and add the egg, water, olive oil and molasses. Stir until everything is combined well and the dough is moistened.On the prepared baking sheet, begin making tablespoon-size balls and placing them about 1-2 inches apart. Repeat until you've filled the baking sheet. Place in the oven for 8-10 minutes. Place on a cooling rack and let them cool. The cookies should be soft and chewy.Snack on these throughout the week and enjoy!
