Ingredients

  • 2 cps self-rising flour plus more for working surface
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1 1/2 sticks salted butter cold & cut into small pieces
  • 1 egg beaten, plus 1 for brushing
  • 3/4 cup buttermilk plus 1 tbsp for brushing

Instructions

  • In a large bowl, combine the dry ingredients - the flour, baking powder & baking soda. Add the cold, cubed butter & mix together.
Add in the beaten egg - stir until combined. Pour in the buttermilk & mix together until you have a sticky dough. If it's too dry, add more buttermilk, a tablespoon at a time until you have your desired consistency.
Cover the bowl & refrigerate for 30 minutes.
While the dough is resting, preheat the oven to 400 F & line a baking sheet with parchment paper.
Take the dough out of the fridge & scrape it onto your floured surface. Use a floured rolling pin & roll the dough out until it's about 1/2 inch thick. Take a floured round cutter (or the top of a cup) & begin cutting out your biscuits. Place them on the parchment paper lined baking sheet, until you've filled it up. Arrange them so they are touching.
In a small dish, whisk together the egg & 1 tbsp buttermilk. Brush the mixture on the top of the biscuits. Place the baking sheet on the middle rack & bake for 15-20 minutes, or until golden brown.
Take them out of the oven & let them cool on the pan on a rack.
Cut a biscuit in half & smear with butter. Serve warm & enjoy!
