SENSATIONAL SESAME CRUSTED WONTON SOUP
Chicken filled wontons pinched and sealed to perfection. Crisped sesame seeds underneath and then steamed. Ladle the homemade broth over top of the wontons and you have a warm meal to enjoy.

- 1 lb ground chicken
- 2 green onions + more for serving chopped
- 1/2 cp mushrooms finely chopped
- 2 carrots thinly sliced
- 2 cloves garlic minced
- 2-3 tbsp fresh ginger finely chopped
- handful spinach chopped
- 1/2 sweet onion thinly sliced
- 3 tbsp sesame oil
- 3 tbsp low sodium soy sauce
- 48 oz chicken broth
- 2-3 tbsp rice vinegar
- 1 tsp black pepper
- 1 tsp red pepper flakes
- 1/3 cp sesame seeds
- 1 pkg wonton wraps
*Before I start, I like to chop up all my ingredients*WONTONSIn a medium bowl, add the ground chicken, 1 green onion (chopped), 1/2 cp mushrooms (finely chopped), 1 clove garlic (minced), 1 (heaping) tbsp of ginger (finely chopped), handful of spinach (chopped), 2 tbsp soy sauce and 1 tsp black pepper. Mix until everything is combined.Set up your "wonton making" station. Grab your wonton wraps, a large plate and a small bowl of water.To assemble, place a tablespoon of your chicken mixture onto your wonton wrap. Brush water onto all four sides of the wonton wrap. Take the top right corner and bottom left corner and bring them together. Take the other two corners and bring them to the center. All four corners should be touching. Lightly pinch to seal and secure the wonton. Repeat until you've made all your wontons.Grab a small plate or a shallow bowl for your sesame seeds. Using the same small bowl of water, quickly dip the bottom of the wonton into the water and then into the sesame seeds. So the bottom of the wonton is covered with sesame seeds. Repeat until all wontons are done.BROTHIn a large pot over medium heat, add in a tablespoon of sesame oil. When the oil is shimmering, add in your carrots, onion, garlic and ginger. Stir occasionally for 8-10 minutes until carrots have softened and things are fragrant. Add in the chicken broth, soy sauce, rice vinegar and red pepper flakes. Stir and bring to a gentle simmer. Once its simmering, put a lid on and reduce the heat to low.Now back to the wontons. In a large pan, heat about 2-3 tbsp of sesame oil over medium heat. Let the oil get hot. Add in as many wontons as you are able to fit and let cook for 3 minutes. Add in 1/4 cp water and immediately put a lid on. *Be careful when adding the water, it will splash! Reduce the heat to medium low and steam for 6 minutes.Remove the wontons from the pan and place on a plate. Place about 4 wontons in a shallow bowl and ladle the broth over top (about 2-3 ladlefuls). You don't want to fully submerge the wontons. Garnish with some green onion and enjoy!
