CONFETTI ICE CREAM SANDWICHES
These ice cream sandwiches are so fun! You most likely have all the ingredients in your pantry already & they are super tasty. They are kid friendly, so if you’re looking for something fun & maybe a little messy, to do with kids, this is it! Enjoy!
CONFETTI ICE CREAM SANDWICHES
INGREDIENTS
- 1 box cake mix (I used Pillsbury funfetti cake mix)
- 2 eggs
- 1 stick salted butter, melted
- sprinkles – optional
- vanilla ice cream
DIRECTIONS
Preheat oven to 350 F.
In a mixing bowl, combine the cake mix, eggs, melted butter & sprinkles – if you’re using them. Stir until combined.
Take a baking sheet & line with parchment paper.
Take a spoonful of dough & form into a ball. Once you’ve made a ball, flatten it so its about 2 inches wide & set on the lined baking sheet. Repeat until you’ve filled the baking sheet. There should be about an inch of space between the cookies. They won’t expand too much.
Bake for about 10-12 minutes.
Let them cool on a cooling rack for about 20 minutes.
Take a scoop of ice cream & put it on the bottom of one cookie. You may need to spread it out with a spoon. Place another cookie on top of the ice cream & squeeze together lightly until you have an ice cream sandwich. Repeat until you have about 6-8 ice cream sandwiches!
TIPS
- Feel free to use whatever cake mix you like!
- You could use a different flavor of ice cream.
- If you want to make it fun, you could roll the sides of the ice cream sandwich in sprinkles so they stick to the ice cream.
