SHREDDED CHICKEN GYROS

The SHREDDED CHICKEN GYROS have become a staple in our household. This recipe is relatively simple & SO flavorful. It’s perfect for a summer day, especially if you’re craving something light & healthy! Enjoy!

SHREDDED CHICKEN GYROS

INGREDIENTS

MARINADE

  • 1 lb chicken breasts
  • 3 tbsp greek yogurt
  • 3 tbsp lemon juice
  • 1 tbsp red wine vinegar
  • 1 tbsp olive oil
  • 3 cloves garlic – minced
  • 2 tbsp dried oregano
  • 1 tsp salt
  • pepper to taste

TZATZIKI 

  • 1 1/4 cp greek yogurt
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 English cucumber – grated & drained
  • 1 garlic clove – minced
  • salt & pepper to taste
  • 1 tbsp honey

TOMATO & CUCUMBER SALAD

  • 2 roma tomatoes – chopped
  • 3 mini cucumbers – chopped
  • 1 red onion – chopped
  • salt & pepper to taste
  • 1/3 cp feta cheese – crumbled

GYROS

  • pita bread (or pita pockets)
  • shredded chicken
  • tzatziki
  • tomato & cucumber salad

Directions

MARINADE

In a medium sized mixing bowl, combine all the ingredients & stir. Trim any weird pieces off the chicken breasts & rinse. Take a large ziplock bag (I use 1 gallon sized bag) & place the chicken breasts in it. Pour the marinade over the chicken breasts & seal the bag so it is air tight. With your hands, take the bag & massage the chicken so all the pieces are covered with the marinade. Place bag in a bowl & refrigerate for 4 hours.

TZATZIKI

With the skin on, grate the English cucumber onto a cheesecloth. Once you’ve grated the cucumber, gather the cheesecloth at the top, hold it over the sink & squeeze as much water out as you can. Place cucumber in medium sized bowl. Add the rest of the ingredients to the cucumber & stir until combined. Cover tzatziki sauce & refrigerate until ready to serve.

TOMATO & CUCUMBER SALAD

Chop the tomato, cucumber & onion. In a bowl, combine all the vegetables,  add feta, salt & pepper to taste. Refrigerate until ready to serve.

Once the chicken breasts are done marinating, heat 1-2 tbsp of olive oil in large skillet over medium-low heat. Once oil shimmers, place chicken breasts in pan (you may need to do in 2 batches depending how big your pan is). Cook chicken until lightly browned on both sides – about 5 minutes on each side. When chicken is done cooking, place on a plate & let sit for 5-10 minutes. Take 2 forks & shred chicken.

Warm pita bread in the microwave. Take warmed pita bread, add chicken, tzatziki & then tomato cucumber salad. Fold like a taco or roll up like a burrito, serve & enjoy!

TIP:

  • if you have extra pita bread, make homemade pita chips & dip them in the tzatziki sauce!
