SIMPLE 7 INGREDIENT TOMATO SOUP

A simple but tasteful tomato soup served with a grilled cheese sandwich to warm you up on a winter night. This soup has a handful of ingredients and is ready in no time!

My tomato soup has only 7 ingredients in it, you can’t beat that! It’s beyond easy to make and will leave your stomach warm and full. I like to serve my tomato soup with a melty grilled cheese sandwich. I feel like there isn’t a better combo! Obviously you could serve it with other wonderful things, like a fresh chopped salad, a cold cut sandwich or even a BLT. Whatever your taste buds desire!

In Michigan, the winters can get pretty cold. I love making my warm tomato soup on one of those cold winter nights. It fills the house with such a nice aroma. Sometimes, once I’ve made the soup up, I will let it gently simmer for about 30 minutes to help marry the ingredients. If I don’t have the time for this, I can whip it up quickly and serve it immediately.

The Ingredients Needed for my Simple Tomato Soup

I’ve made this tomato soup multiple times and have had the best luck when I’ve used canned diced tomatoes. I get a smoother soup. I’ve used canned whole tomatoes and found that we would bite into hard pieces which ended up being the seeds. Both work but that’s why I suggest the diced tomatoes. For the onion, I always like to use sweet onions, they don’t have too much of a kick and add such a nice flavor. If you’re not a sweet onion person, feel free to use a white onion. Personally I don’t think I’d use a red onion for this soup – it may pack too much of a punch. My tomato soup is definitely a mild soup with a slight sweetness to it. You can put in as much garlic as you’d like. I do about 3 cloves because you can definitely taste it, but you don’t reek the next day, haha! For the spices, I keep it simple – fresh thyme leaves, salt and pepper. You could also throw in some oregano, basil or red pepper flakes for a little kick. Dress it up as you’d like!

TIPS

If you can’t find canned diced tomatoes or only have whole or crushed tomatoes in your pantry, don’t fret, that will work just fine! Whatever kind of canned tomatoes work.

This tomato soup is smooth, so if you like a little bit of chunkiness to your soup, just pulse the veggies and pour them back in.

I like to serve my tomato soup with a cheesy grilled cheese. I’m a dipper and have to dip every bite! For my grilled cheese, I’m an American cheese gal. I know there are better cheeses out there but there’s something about American cheese for a grilled cheese. But if you don’t love American cheese, I’ve used Swiss and Cheddar before and loved both.

If you don’t have pesto, you could add in some fresh, finely chopped basil. I’d add it in either right before you serve it or you could sprinkle a little on top.

I’ve never had this problem, but if your soup gets too thick, add in some more milk until you have the consistency that you like.

If you have some shaved or shredded parmesan, sprinkle some on top of your soup – so good!

Ingredients
  

  • 1 28 oz. can diced tomatoes
  • 1 sweet onion quartered
  • 3 garlic cloves smashed
  • 4 tbsp salted butter
  • 2 tbsp fresh thyme leaves
  • salt & pepper to taste
  • 1 cp whole milk
  • 2-3 tbsp pesto

Instructions
 

  • Heat a large soup pot over medium-low heat.
    Quarter your onion & smash you garlic cloves.
    To the soup pot, add the can of tomatoes, quartered onion, smashed garlic, butter, fresh thyme leaves, salt & pepper. Bring to a low simmer, for about 20 mintues - stirring occassionally.
    Once fragrant, using a slotted spoon, transfer the tomatoes, onion and garlic to a blender. Add the milk and blend until smooth - about 1 minute.
    Pour the blended mixture back into the large soup pot. Add in the pesto and let the soup warm through - about 10 minutes.
    Serve immediately and enjoy with a grilled cheese sandwich!
