My mom made these oatmeal raisin cookies the other day, dropped some off for me at work & I have not stopped thinking about them since! So I whipped up a bunch & have been in heaven. These cookies are obviously a dessert, but if you’re not in the mood to make breakfast & want something quick, have one of my oatmeal raisin cookies with a warm cup of Joe – you’re welcome!

The Ingredients Needed for my Oatmeal Raisin Cookies

My oatmeal raisin cookies are made with simple ingredients that are probably sitting in your pantry just waiting to be used. For the butter, if I know I’m making cookies that day, I’ll set the butter out when I wake up in the morning so by the time I’m ready to make the cookies, it’s room temperature & softened. If you forget to do this, you can throw it into the microwave for about 20-30 seconds & that works just as well. For the oats, you can use quick or old fashioned. I like to use old fashioned. I feel like they give the cookies a nice texture, plus it adds the slightest crunch..yum! As far as raisins go, I added about 1/2 cup. You could add more or less depending how much you love raisins. To me, 1/2 cup was just the right amount of raisin. You get at least one in every bite!

Tips

If you aren’t a huge oatmeal lover, you could put half the amount in there. Your oatmeal raisin cookies will just look more like your average cookie – smoother.

When it comes to the raisins, again you can add as many or as few as you’d like. Yes these are oatmeal RAISIN cookies but I get that not everyone loves raisin. The cookie dough itself is delicious!

This recipe makes a lot of cookies. If you don’t want to make all the cookies at once, you could make up a batch at a time. Whatever you don’t use, you can refrigerate for up to 2 days. This way, you have fresh, out of the oven oatmeal raisin cookies all the time!

Ingredients
  

  • 1 stick + 6 tbsp salted butter softened
  • 3/4 cp brown sugar packed
  • 1/4 cp granulated sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1 1/2 cp all-purpose flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • sprinkle of salt
  • 3 cps oats quick or old fashioned, uncooked
  • 1/2 cp raisins

Instructions
 

  • Preheat your oven to 350 F.
    Line a baking sheet with parchment paper & set aside.
    In a large mixing bowl or in your KitchenAid Mixer, beat the softened butter & sugars together on medium speed until creamy. Add in the eggs & vanilla, beat well.
    In another bowl, combine the flour, baking soda, cinnamon & salt.
    Slowly add in the flour mixture to the wet ingredients - beat until combined.
    Add in your oats & raisins, folding them in until evenly distributed throughout the dough.
    Take a heaping tablespoon of cookie dough & form into a ball - place on baking sheet. The cookies will spread so be sure to leave space in between each cookie. Repeat until you have about 6-12 cookies (depending on how big your baking sheet is).
    Bake for 8-10 minutes - until they are light golden brown. Let cool for about 3-5 minutes & transfer to cooling rack. Let completely cool & store in a tightly sealed container.
    Serve warm with a cold glass of milk!
