CHIPOTLE BEEF ENCHILADAS

Another Mexican dish, sorry not sorry! I love my Mexican food – it’s one of my faves! Theses enchiladas are so flavorful with a little bit of smokiness from the chipotle peppers. I hope you enjoy them as much as Jeff & I do!

CHIPOTLE BEEF ENCHILADAS

INGREDIENTS

  • 1 lb ground beef
  • 4-5 chipotle peppers in adobo sauce – chopped
  • 1 sweet onion – chopped
  • 1 red bell pepper – chopped
  • 1 pkt taco seasoning
  • 12 oz can red enchilada sauce
  • shredded Mexican cheese
  • 8 tortillas

DIRECTIONS

Preheat oven to 400 F.

In a large skillet, add the beef & begin cooking. Once it’s slightly browned, add in the onion & red pepper. Cook for 5-7 minutes until they’ve softened slightly. Add in the taco seasoning packet & follow directions according to packet.

Once you’re done cooking the meat mixture, set aside & take a 9×13 baking dish & pour in the enchilada sauce – just enough to coat the bottom.

Take your tortilla & begin filling with the meat & cheese. Take about 2-3 tbsp of the meat mixture & lay it down the middle of the tortilla. Sprinkle with the Mexican cheese. Roll up, leaving the ends open & put in the baking dish. Repeat until you have 8 enchiladas.

Now that you’ve rolled up 8 enchiladas, pour the remaining enchilada sauce over the top (personally, I don’t quite use all the enchilada sauce, I just pour enough to coat them all evenly. But if you like a saucier enchilada, go ahead & use the rest of the enchilada sauce!) Sprinkle with cheese (again, use however much cheese you like, I just eye it).

Place in the oven, uncovered for about 15-20 minutes. Until the cheese is fully melted & they are slightly golden brown on the ends.

Serve immediately & enjoy!

 

TIPS

  • You could make this ahead of time. You’ll follow the directions up until you pour the enchilada sauce on top & sprinkle with cheese. Store in the fridge & then when you’re ready to serve, pour the enchilada sauce on top, sprinkle with cheese & cook!
  • Guacamole would add a nice touch to this dish.
  • If you don’t eat meat, you could substitute beans instead.
  • You could also add black beans into the meat mixture so you get meat & beans!
