HASSLE FREE HOLIDAY PRETZEL BITES WITH CHOCOLATE AND CARAMEL

These pretzel bites have chocolate covered caramel sandwiched between two pretzels and drizzled with white chocolate. You can add sprinkles for some fun and a pop of color too!

These chocolate and caramel pretzel bites are my go to around the holidays. They’re always such a hit wherever I take them. I started making them probably three or four years ago. Over the years I have played around with the recipe. I’ve dipped just the corner in the white chocolate, I’ve dipped one side in the white chocolate and my latest thing is drizzling the white chocolate over all of them at once. I just love the look it gives them. Plus it’s the perfect amount of chocolate on each pretzel bite.

The Ingredients Needed for the Holiday Chocolate and Caramel Pretzel Bites

So for the pretzel bites, I like to use the pretzel snaps. They resemble a checkerboard and make for a cute little pretzel bite! You could totally use a different shaped pretzel if you aren’t able to find the checkerboard shaped pretzels.

Rolo candies are what I use for the middle part of the pretzel bites. They warm up perfectly in the oven so when you sandwich them in between the pretzels they flatten out great! I’ve never used anything other than the Rolos but I’m sure there are other candies out there that would taste just as good. Something about a sweet and salty dessert. Yum!

For the white chocolate, I like to use melting chips. I seem to have the best luck with these. There’s a baking supply store close to where I live that I used to go to for the melting chips. But I was at Target the other day and spotted Ghirardelli melting chips and thought they would be good. They were! I know some people will melt chocolate chips with some coconut oil. Whatever works best for you. I will say, white chocolate is good for these pretzel bites because you’ve already got the milk chocolate from the Rolo so the white chocolate compliments it well.

TIPS

I always start by unwrapping all of the Rolos and putting them in a bowl. This makes it a quick process after that.

As the candies are about to come out of the oven, I usually ask Jeff to help smoosh the Rolos down with the pretzels. The quicker you smoosh, the better. If you don’t have a second pair of hands, just do smaller batches.

For sprinkles, if you do decide to do sprinkles, quickly sprinkle them before the white chocolate hardens.

I like to store the pretzel bites in the fridge, in a sealed container. They don’t have to be kept in the fridge, it’s just a preference. Give it a try!

HASSLE FREE HOLIDAY CHOCOLATE CARAMEL PRETZEL BITES

Ingredients
  

  • 1 (10.6oz) bag Rolo chocolate candies
  • 1 bag Snyder's of Hanover pretzel snaps
  • 1/2 (10 oz) bag Ghirardellli white melting wafers
  • sprinkles (optional)

Instructions
 

  • Preheat oven to 200 F.
    Line a baking sheet with parchment paper and set aside.
    Unwrap all of the Rolo candies and put them in a bowl. You should have between 40-50 Rolo candies. Once you've done that, pour the pretzels in a different bowl.
    Begin placing the pretzels on the baking sheet. You should be able to fit all 40-50 on the one sheet (8 across and 5 down). They can be close but be sure to leave about 1/2 inch in between so when you sandwich them, they don't stick together.
    Once you've filled the baking sheet with the pretzels, top each pretzel with a Rolo. Repeat until all pretzels have a Rolo on them.
    Place in the oven for 3 minutes.
    While those quickly bake, start melting your white melting wafers. I like to double boil to melt my chocolate. You could also microwave, if that's easier for you.
    After 3 minutes, take them out and quickly begin putting a pretzel on top and applying slight pressure to create a "sandwich". Repeat until you have "sandwiched" all of them.
    When your melting wafers have melted, take a silicone spatula and begin flicking/drizzling the melted chocolate over the pretzels. This does not have to be perfect. Do this until you have covered all of the pretzel bites to your liking. If you want to add sprinkles, make sure to do it before the white chocolate hardens.
    Place the baking sheet of pretzel bites into the fridge and let them chill for at least 1 hour before serving.
