GRANDMA’S PUMPKIN BREAD

This ones another family fave! My grandma’s pumpkin bread is a staple at both Thanksgiving & Christmas gatherings. My grandma still, to this day, will save a loaf for us to take home. It’s such a perfect recipe for fall. It has all the perfect autumn spices – clove, nutmeg & cinnamon. You’ve gotta try it!

GRANDMA'S PUMPKIN BREAD

INGREDIENTS

  • 2 cps granulated sugar
  • 1 cp oil (I used vegetable oil)
  • 3 eggs
  • 2 cps canned pumpkin
  • 3 cps all purpose flour – sifted
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp clove
  • 1 tsp nutmeg
  • 1 tsp cinnamon

DIRECTIONS

Preheat oven to 350 F.

Grease 9×9 pan & coat with cinnamon sugar mixture. Set aside.

In a mixing bowl, beat the sugar & oil at medium speed until combined. Add in the eggs, one at a time – beat until fluffy. Add in the pumpkin, beat until combined.

In a medium bowl, sift in your flour. Add in the rest of the dry ingredients – salt, baking powder, baking soda, clove, nutmeg & cinnamon.

Slowly add the dry ingredients in with the wet ingredients while beating on low speed.

Once you have your batter, pour the mixture into the greased pan. Place in the oven for 50-60 minutes – until a toothpick comes out clean. Let cool for 30 minutes.

Cut into 16-20 slices, serve warm & enjoy!

TIPS

  • When I make anything in the oven, I set the timer at about half the time it says, check on it & continue setting the timer in 5-10 minute increments & checking on it, to make sure nothing over bakes & burns. Everyones ovens bake differently!
  • Spread butter on top to add a little saltiness to your pumpkin bread.
  • Enjoy the next morning with a cup of coffee or tea!
