EASY STEEL CUT OATMEAL WITH STRAWBERRIES & PECANS
This breakfast dish is filled with protein & fiber to keep you full through your morning! I top my steel cut oatmeal with strawberries, pecans & a sprinkle of brown sugar. You could play around with your toppings to better fit what you enjoy!
This simple dish always starts my day off on the right foot. It’s hearty & keeps me feeling full until lunch.
You get the creaminess from the steel cut oats, some sweetness from the strawberries & brown sugar & some crunch from the pecans.
Steel Cut Oats are fun to “fancy up”. You can keep them simple with just some sugar & milk or you can add some fruit, a sprinkle of sugar & some healthy nuts! Have fun with it!
The Ingredients Needed For Oatmeal
Because this is a healthier dish, I used Bob’s Red Mill Steel Cut Oats. These have more protein & fiber than regular oats do. If you are not a fan of steel cut oats, you could totally use quick oats or even old fashioned oats!
Having some kind of fruit to top the oatmeal is a must, in my opinion. It adds some natural sweetness.
I chose light brown sugar because I love the caramel-y flavor it adds to the dish. You could also use granulated sugar. And because you added fruit, you could even eliminate sugar & just use the natural sugars from the fruit as your sugar.
As far as choosing a nut, I picked pecans for their butter texture & sweet, nutty flavor. You could use whatever nut you prefer. Walnuts would also be a nice touch!
Tips
In the Steel Cut Oat instructions for cooking, it says 15-20 minutes. I personally like my oatmeal on the thicker side so I cook mine for 20-22 minutes.
To create a slight syrup with the strawberries, sprinkle some granulated sugar on them, mix together & let sit for 5-10 minutes. It’s so good!
STEEL CUT OATS WITH STRAWBERRIES & PECANS
Ingredients
- 1/2 cp steel cut oats
- 1 1/2 cps water
- 6 strawberries
- 1/3 cp pecans
- 2 tbsp light brown sugar
Instructions
- In a small to medium sized sauce pan, add 1 1/2 cups of water. Heat over medium high heat & bring to a boil.Once the water is boiling, add 1/2 cup steel cut oats, reduce the heat to medium-low, stir & cook for 20-22 minutes. Stir occassionally.While the oats are cooking, cut up your strawberries to your desired size & set aside.Chop up your pecans to your desired size (I like mine roughly chopped, it adds more crunch).When the steel cut oats are done cooking, spoon them into 2 bowls. Top with strawberries, pecans & about a tbsp of brown sugar.Serve & enjoy!
