AMAZING AUTUMN BANANA BREAD WITH CHOCOLATE CHIPS
Banana chocolate chip bread with a twist! Nothing better than adding some pumpkin to the mix & creating the best Autumn Banana Bread with Chocolate Chips.
This is the perfect thing to have for breakfast. It’s an any time of year breakfast bread.
Because it’s Fall & pumpkin seems to go in everything during this time of year, I thought I’d try it in my banana bread!
I’m all about planning out me meals for the week. This bread will usually last my husband & I about the whole week. I LOVE it with my coffee in the morning. I usually make my coffee & while it’s brewing, I’ll pop a piece of the bread in the microwave to warm it up & smear some butter on top. Enjoy it with my coffee, or you could even have it with tea; so good!
The Ingredients Needed for the Autumn Banana Bread
Whenever you have a few bananas that have gotten a little too brown, banana bread is a MUST! I feel like it’s a known thing – brown, mushy bananas = banana bread. The overly ripe bananas are super sweet & make for the best banana flavor.
The pumpkin puree gives it that Fall twist. It’s not over powering in anyway. It simply just adds an earthy & sightly sweet flavor to the banana bread.
The chocolate chips, are a must. They add a semi-sweet bite & some creaminess to the bread. You can add as many as you want depending on how chocolatey you like it!
Tips
If you’re not into pumpkin like I am, omit it & add 2-3 more bananas.
Not a fan of chocolate chips? Leave them out! The Autumn Banana Bread will be just as good!
You could also add nuts! I would finely chop some walnuts & incorporate them into the batter. It’ll give it that nice little crunch.
AUTUMN BANANA BREAD WITH CHOCOLATE CHIPS
Ingredients
- 1 stick salted butter melted & cooled, plus softened butter for serving
- 1 cp packed light brown sugar
- 2 eggs beaten
- 1 1/2 tsp vanilla extract
- 2 very ripe bananas mashed (I leave them a little chunky)
- 1/2 cp pumpkin puree
- 1 3/4 cps all-purpose flour
- 1 tsp baking soda
- 1/2 tsp kosher salt
- chocolate chips as many as you'd like (I do about 1/3-1/2 cp)
- 1-2 tbsp granulated sugar
- 1 tbsp cinnamon
Instructions
- Preheat oven to 350 F. Oil an 8x8 inch pan with coconut oil or line with parchment paper.In a large mixing bowl, beat together the butter, brown sugar, eggs & vanilla until combined. Add in the mashed bananas & pumpkin puree - mix until well combined.In another bowl, combine your dry ingredients - flour, baking soda & salt. Add the dry ingredients into the wet ingredients - a little at a time. Add in the chocolate chips & mix until everything is combined.Pour the batter into the prepared 8x8 inch pan & spread out the batter evenly. Sprinkle the sugar & cinnamon mixture over the top - as much as you'd like.Place in the oven, on the middle rack & bake for 45-50 minutes - until a toothpick comes out clean.Once its baked, let cool for about 30 minutes.Serve warm with some butter & enjoy!
