EASY AND SAUCY SPAGHETTI WITH CHEESE STUFFED MEATBALLS

Such a simple, go-to meal to cook up on a night you’re feeling lazy. You can’t go wrong with spaghetti. Large cheese stuffed meatballs on top of a pile of noodles, covered in a warm tomato sauce. Enjoy with some garlic bread on the side.

Spaghetti and meatballs is definitely a very basic meal but it can be fancied up so easily! You could do quick and easy with a tomato sauce, noodles and parmesan cheese. You could also add meat to your tomato sauce and serve over noodles with parmesan or you get a little more extravagant and make meatballs smothered in tomato sauce with parmesan sprinkled over top.

I love serving my spaghetti and cheese stuffed meatballs with homemade garlic toast. I’ll pick up a french baguette from the store, slice it up and smear the pieces of bread with butter. Sprinkle them with some minced garlic, oregano and parmesan cheese. Throw them in the oven at 350 F for a quick 7-10 minutes and you’ve got some delicious garlic toast!

INGREDIENTS NEEDED FOR MY SPAGHETTI AND CHEESE STUFFED MEATBALLS

For the noodles, I like to use good ol’ regular spaghetti noodles. There are so many different kinds of noodles out there but I stick with the basics with this recipe. If you have any sensitivities, obviously use whatever works well with you!

As far as the sauce goes, I usually will use a tomato basil pasta sauce, a four cheese or even a garlic pasta sauce. If I’m feeling fancy, sometimes I will throw in some finely chopped green pepper and onion to add to the sauce. If you do add to the sauce, it doesn’t hurt to let it simmer for 30 minutes-1hr and let the flavors marry.

For the meatballs, I will use a lean ground beef. For the cheese, I used provolone for this recipe but mozzarella would be great too!

TIPS

I used regular spaghetti noodles, but think angel hair pasta would be so good! I love a finer noodle, it’s fun to eat.

For the meatballs, you could do a mixture of ground beef and ground pork. Flavor it up!

Serve this with some yummy homemade garlic toast! I put a quick recipe earlier in the page. Super simple! 

You could also serve this as is or with a fresh tossed salad.

Ingredients
  

  • 1 lb ground beef 85/15
  • 1/2 sweet onion chopped finely
  • 1-2 garlic cloves minced
  • 1/4 cp panko breadcrumbs
  • 1 egg
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp italian seasoning
  • 12 cubes provolone cheese
  • 1 (24) oz pasta sauce
  • 1 tbsp pesto
  • 2 tbsp whole milk
  • 8 oz spaghetti noodles

Instructions
 

  • Preheat oven to 400 F.
    Line a large baking sheet with parchment paper and set aside.
    In a medium bowl, add the meat, onion, garlic, breadcrumbs, egg, salt, pepper and italian seasoning. Combine using your hands.
    Take about 1-1 1/2 tbsp of the meat mixture and slightly flatten with your hands. Add 1 cube of provolone cheese to the center. Take the meat and cover the cheese. Create your meatball and place on your lined baking sheet. Repeat until you have 12-15 meatballs. Place in the oven and cook for 23-25 minutes, flipping half way through.
    While the meatballs cook, bring a large pot of water to a boil and cook your noodles.
    In a large sauce pan over low heat, add your sauce, pesto and milk. Stir and warm through.
    When the meatballs are cooked, the noodles are done and the sauce is warmed through, begin plating. Noodles first, sauce and then top with the meatballs. If you have parmesan, sprinkle some on top.
    Serve with some garlic bread or a salad and enjoy!
