CHEESY BEEF AND POTATO STUFFED BURRITO

This cheesy beef and potato stuffed burrito is filled with crispy air fried potatoes, seasoned beef, a melty mexican cheese blend and a creamy salsa. It’s baked until it’s lightly browned to create the perfect crunch when you take a bite! 

I made this potato stuffed burrito after Jeff and I had Taco Bell one night. Late night Tbell runs are one thing I don’t think we will ever stop doing. Something about Taco Bell late at night; it just hits different. We ordered their Beefy Potato-rito and were obsessed. So I made an at home, healthier version that you guys will LOVE! Obviously, these burritos are super customizable so have fun with them!

Because the Beefy Potato-rito is one of our current faves, I thought it would be fun to recreate a good, if not better, version of it at home!

INGREDIENTS NEEDED FOR THE CHEESY BEEF AND POTATO STUFFED BURRITO

For the tortillas, I use Mission Whole Wheat tortillas. You could totally use whatever tortillas you prefer. My only suggestion would be to use flour tortillas instead of corn tortillas. The flour tortillas are a lot easier to work with.

Because these potato stuffed burritos are on the healthier side, I will get ground beef that is 93/7. For the taco seasoning, I get the packet that has less sodium than the original.

I like to get two small to medium sized Yukon gold potatoes. I dice them up, skin left on and all! I’ll use avocado oil to lightly coat them because it has a high smoke point. You could totally cook the potatoes in a pan or in the oven. I like the air fryer because it’s quick and convenient.

As far as cheese goes, I like to use a Mexican blend. Whatever cheese you prefer works! Same with the salsa. I usually will get a “Restaurant Style” salsa that is medium spice but whatever salsa you love, will work!

TIPS

If beef is not your thing, you could use ground chicken or turkey!

If you wanted to make these potato stuffed burritos a little fancier, you could throw some sliced onion and jalapeño in while you brown your meat.

I love beans. You could add some black beans to your burrito too.. mmm!

Ingredients
  

  • avocado oil
  • 4 flour tortillas
  • 1 lb ground beef seasoned and cooked
  • 2 yukon potatoes seasoned and air fried
  • 1/2 cp mexican blend shredded cheese
  • 1/4 cp plain greek yogurt
  • 1/4 cp salsa
  • 1 pkt taco seasoning
  • taco bell mild sauce
  • cumin
  • salt & pepper
  • paprika
  • minced garlic

Instructions
 

  • First, dice the potatoes.
  • In a medium mixing bowl, add in your diced potatoes. Drizzle with avocado oil, salt, pepper, cumin, paprika and minced garlic. Mix until coated. Add to the air fryer and cook at 400F for 10 minutes, shake around and cook another 5 minutes.
  • While the potatoes are cooking, make your creamy salsa. It's equal parts plain greek yogurt and salsa. Mix and set aside.
  • In a medium pan over medium heat, begin cooking the beef. Once you've browned the meat, add in the taco seasoning according to the instructions on the packet. Turn off heat and set aside.
  • Turn the broiler on - I set mine on high. If you set on high, be sure to keep an eye on it, it cooks quick!
  • Take your tortillas and lay them on a baking sheet. Begin layering them. Start with about 2-4 tbsp of the seasoned beef down the center. Add some potatoes and sprinkle with cheese. Add the creamy salsa. If you like a little kick, add some jalapenos!
  • Once you've filled the tortilla, fold it into a burrito and repeat until you have four burritos. Lightly brush avocado oil on the top of the burritos and place in the oven with the broiler on. Depending on the setting, cook between 3-5 minutes, or until golden brown.
  • Take them out, drizzle with Taco Bell's Mild sauce and enjoy!
