DELICIOUS GUILT FREE CINNAMON OAT COOKIES

Enjoy these soft and chewy cinnamon oat cookies as a healthy snack. They are made with healthier ingredients, which makes them guilt free when you are trying to clean up your diet but still want to indulge in something sweet. 

These are a hit in our household! On Mondays, I will make a batch of the cinnamon oat cookies for the week. This recipe will make about 16-20 cookies and will last us about 5 days between the two of us. Sometimes I will have one with my coffee in the morning or I will have a couple of them as a little pick me up in the middle of my day. Jeff usually has two in the afternoon as a snack. You would never guess that these are a “healthified” cookie. 

Jeff and I like to start each year off on the right foot so we will clean up our diets after over indulging during the holidays. These cinnamon oat cookies help get use through! The ingredients in them are cleaner which make them a delicious guilt free cookie!

INGREDIENTS NEEDED FOR THE CINNAMON OAT COOKIES

These cinnamon oat cookies call for two types of flour. You will need both whole wheat flour and brown rice flour. These are not your “typical flours” but they can be found at most grocery stores!

The other ingredients are pretty common and you, most likely, have them in your pantry already! The cinnamon oat cookies are very simple and full of flavor!

TIPS

The cinnamon oat cookie dough can seem a bit crumbly. After you mix all the ingredients together, if they seem dry and crumbly, add 1 tsp of water and mix. Add a teaspoon at a time until you have a well combined dough.

If you like raisins, they would add a nice touch! Add 1/4 cup, or more if you love raisins!

I like to bake my cookies for 8 minutes. They are moist and have a nice chewy texture.

Ingredients
  

  • 1/2 cp whole wheat flour
  • 1/4 cp + 2 tbsp brown rice flour
  • 1/4 tsp baking soda
  • 1/2 tbsp cinnamon
  • 1/4 tsp salt
  • 1/4 cp + 2 tbsp packed brown sugar
  • 3/4 cp old fashioned oats
  • 1 egg
  • 1/4 cp olive oil
  • 2 tbsp water
  • 1/2 tbsp molasses

Instructions
 

  • Preheat the oven to 375 F.
    Line a baking sheet with parchment paper and set aside.
    In a medium bowl, add your dry ingredients, whole wheat flour, brown rice flour, baking soda, cinnamon, salt, brown sugar and old fashioned oats - combine.
    In the center, create an indentation and add the egg, water, olive oil and molasses. Stir until everything is combined well and the dough is moistened.
    On the prepared baking sheet, begin making tablespoon-size balls and placing them about 1-2 inches apart. Repeat until you've filled the baking sheet. Place in the oven for 8-10 minutes. Place on a cooling rack and let them cool. The cookies should be soft and chewy.
    Snack on these throughout the week and enjoy!
