
QUICK EGG AND AVOCADO TOAST FOR BREAKFAST YOUR WAY
Load up your morning avocado toast by smearing it with butter and half of a smashed avocado. Place an egg, made to your liking on top. Sprinkled with everything bagel seasoning and drizzled with honey. This combo may sound a little funny, but do not knock it until you’ve tried it; it’s delicious!
I’m sure you’ve heard of avocado toast for an easy and healthy breakfast in the morning. It’s great just the way it is; toast, butter and avocado. But add an egg for some protein, a sprinkle of everything but the bagel seasoning for some extra flavor and a drizzle of honey for a little sweetness and o m g!
INGREDIENTS NEEDED FOR THE SUNNY SIDE UP AVOCADO TOAST
For the avocado toast, I will usually use whole wheat bread. I have also used english muffins. Honestly you could use whatever bread you have on hand. Even a bagel or bagel thin would be good! Smear with salted butter and you’ve got your base.
For the avocado, this is key for this avocado toast. You want an avocado that is brown in color and slightly soft to the touch. When I’m at the grocery store, I will look for a mostly browned avocado and I feel it to make sure it’s slightly soft. That way, it’s almost ripe and I don’t have to wait too long before using it. If you aren’t planning on making you avocado toast within the next day or two, look for an avocado that is brown but still slightly green. That way it’ll ripen over the next couple days on your counter and will be ready for you when you decide to make your sunny side up avocado toast.
I like to make the egg over easy. Cutting the center of the egg and having the yolk disperse all over the avocado toast is so good! It adds more creaminess to it.
The everything but the bagel seasoning is usually pretty easy to find. I get mine from a local grocery store, but have seen it at stores like Target. If you have a hard time finding, you could easily make your own with the seasonings you probably already have at home.
I know, honey, seems weird right? But it’s not! It brings a slight sweetness to this meal. Mmm mm mmmm!

TIPS
My avocado toast is pretty dang good on an english muffin. Give it a try!
You could cook your egg sunny side up or poach it. If you’re not a runny yolk person, cook it over medium or make a fried egg, whatever you love!
The honey is definitely a different touch but boy does it make the avocado toast so, so good! You don’t need a lot, just a quick drizzle. If you’re not feeling up for the honey, avocado and egg combo, leave the honey out. It will be just as tasty!

Ingredients
- 2 slices bread toasted and buttered
- 1 avocado smashed
- 2 eggs sunny side up
- 2 tsp everything but the bagel seasoning
- honey
Instructions
- Start by peeling and pitting your avocado. In a bowl, smash the avocado with a fork (you could make it as smooth or as chunky as you'd like). Season with salt and pepper and set aside.Take the two pieces of bread and toast them. When toasted, smear with butter and set aside.In a small pan, heat olive oil over medium-low heat. After about a minute or two, crack two eggs and lightly season with salt and pepper. When the egg whites are white, flip and turn off the heat. Let sit for another minute or two.Take your buttered toast, smear half the avocado mixture on one piece and the other half on the second piece of toast. Sprinkle about a teaspoon of everything but the bagel seasoning on each piece and then place an egg on each piece of toast. Drizzle with honey.Serve immediately and enjoy!
