Chicken Orzo Soup

My lazy day chicken orzo soup is another fall favorite! It’s a super simple soup but has all the flavors & is loaded with vegetables. The ingredients are minimal but the chicken & orzo add some heartiness to make your perfect soup. The base is chicken broth along with just 3 seasonings. They say less is more & in this case, it really is!

I picture my chicken orzo soup on a crisp fall day. It fills the house with a tasty aroma & fills your stomach with warmth. Take a piece of your buttered baguette & dip it in the soup. Letting it soak up all the delicious broth.. mmm! This soup is super versatile. You can add whatever vegetables you like to eat & whatever rice or noodle you like. I chose to use orzo because it’s a perfect cross between rice & a noodle.

For the meat, I chose to use rotisserie chicken. For me personally, I like the easy-ness that comes with rotisserie chicken. It’s already seasoned & cooked for you! If you don’t do rotisserie chicken, feel free to use chicken breasts, season them yourself & add them to the chicken orzo soup. Again, whatever your heart desires!

The Ingredients Needed for the Soup

I love a soup that is light & packed with flavor. This chicken orzo soup is it! I use onion, carrots, celery, corn & peas for my veggies but honestly, you could add whatever vegetables you like. I’ve added potatoes to my chicken orzo soup in the past & let me tell ya, it does not disappoint. You can never go wrong by adding potatoes – load those carbs up, ha! For the “noodle” I used orzo. You could totally use rice (white or brown) or you could also use a noodle. Use what you like! 

Tips

With this soup, you can switch up the veggies if you don’t love what I used. If you want more greens in there, add some broccoli, spinach or kale! If you add spinach or kale, add it about 5-10 minutes before serving.

If you are a vegetarian, omit the chicken & make it a veggie & orzo soup!

You could serve the chicken orzo soup with crackers. Break them up & sprinkle them over top your soup. Let them get a little soggy & enjoy!

You could also serve this soup with a salad of some sort to keep it nice, light & healthy.

Ingredients
  

  • 2 tbsp olive oil
  • 1 sweet onion finely chopped
  • 2 cloves garlic minced
  • 4 carrots chopped
  • 3 stalks celery chopped
  • 1/3 cp peas I used frozen
  • 1/3 cp corn I used frozen
  • 8 cps chicken broth
  • 1/2 cp orzo dry
  • 1 rotisserie chicken shredded
  • 1/2 tbsp dried oregano
  • salt & pepper to taste

Instructions
 

  • Heat your dutch oven over medium low heat - add a tablespoon of olive oil.
    Once oil shimmers, add in the onion & garlic. Cook for about 5 minutes or until fragrant. Add in carrots & celery - cook another 7 minutes. Now that the carrots & celery have softened, add in the peas, corn & chicken broth - bring to a gentle boil. When it's boiling, add in your orzo & simmer for 15 minutes. Add in your seasonings - the oregano, salt & pepper. Then add in your shredded rotisserie chicken.
    Cover & let simmer for about 30 minutes.
    Laddle into a bowl & serve with a warm, buttered baguette.
