THE BEST BANANA PANCAKES

Wake up from a restful sleep and whip up some of these banana pancakes.. start your day off right! They’re fluffy, buttery and have the perfect amount of sweetness from those super ripe nanners! 

For some reason, I go through these phases where I love bananas and have one everyday, for like a week, whether it’s with my breakfast or apart of my lunch and then all of a sudden, it comes to a complete halt. I end up with 3 or 4 bananas just sitting on my counter getting nice and brown. So whenever I post a banana recipe, you can always assume it’s because I had some nice, ripe bananas sitting around ready to be baked!

My banana pancakes are so simple! When I wake up craving something sweet and naughty, my mind usually goes straight to pancakes. Mix up your ingredients and they’re ready in no time!

The Ingredients Used for The Best Banana Pancakes

For starters, I use butter milk. I know most people probably don’t always have buttermilk just sitting in their fridge, but they probably have milk, right? So, if you’re that person without the buttermilk, no worries, I have an alternative option for ya! You’ll take 3/4 cup milk, add 2 tbsp white vinegar to it and mix. Let this mixture sit for about 5 minutes. You have just made your own buttermilk, boom!

The banana is definitely optional. Although this is a banana pancake recipe, I get that not everyone loves banana. But if you do go with adding banana, what I like to do is mash it up in a bowl to a very “mashed” mixture. I like my banana pancakes on the smoother side. But if you like a little chunk to your pancakes, roughly mash, or even slice your banana to your preferred chunkiness.

TIPS

Sometimes I will pour the batter into the pan and sprinkle with a little cinnamon – I like cinnamon with banana!

If you’re not a banana fan, you can do blueberries or even chocolate chips instead.

You could completely omit the bananas and just make regular pancakes.

I like to warm my syrup up for about 15-20 seconds in the microwave. It creates a more liquidy consistency and when you pour it over your pancakes, they don’t get cold from your room temperature syrup.

If I have it in the fridge, I like to serve my banana pancakes with sausage or bacon..YUM!

Ingredients
  

  • 1 cp all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cp buttermilk
  • 2 tbsp sugar
  • 1 tbsp salted butter melted
  • 1 egg
  • 1 banana mashed

Instructions
 

  • In a mixing bowl, combine your dry ingredients - all-purpose flour, baking powder, baking soda and salt.
    Add in your wet ingredients - sugar, melted butter, buttermilk, egg and banana.
    Stir, until everything is combined and you have your pancake mix. Your pancake mix will be on the thicker side so you can add more buttermilk (a tbsp at a time) until you have your desired consistency.
    Serve hot, smothered with some syrup and some bacon on the side!
